B’s Cajun Alfredo

Crock Pot Style
What You’ll Need:

  • 2 Chicken Breast, diced
  • Minced Garlic
  • 1 Ring of smoked Turkey Sausage
  • 1 Quart Chicken Broth
  • 2 TBS Cajun Seasoning
  • 3 C Heavy Whipping Cream
  • 1 lbs. Penne, uncooked
  • 8oz Parmesan Cheese
  • 1/2 C Hot Water

Instapot Style
What You’ll Need:

  • 2 Chicken Breast, diced
  • Minced Garlic
  • 1 Ring of smoked Turkey Sausage
  • 1 Quart Chicken Broth
  • 1.5 TBS Cajun Seasoning
  • 2.5 C Heavy Whipping Cream
  • 1 lbs. Penne, uncooked
  • 8oz Parmesan Cheese

Stove Top (One Pot) Style
What You’ll Need

  • 2 Chicken Breast, diced
  • Minced Garlic
  • 1 Ring of smoked Turkey Sausage
  • 1 Quart Chicken Broth
  • 1.5 TBS Cajun Seasoning
  • 2.5 C Heavy Whipping Cream
  • 1 lbs. Penne, uncooked
  • 8oz Parmesan Cheese

Optional Seasonings May Include:
Paprika, Smoked Paprika, Onion Powder, Garlic Powder, Parsley, Pepper, Salt

Directions

Crock Pot Style

Place chicken breast (dry, slightly seasoned) into the crock pot.

Place the sausage, heavy cream, chicken broth, butter, garlic, Cajun and chosen seasonings.

Cook on low for about 4 hours, or high for 2-3, or until the chicken has reached 165 degrees.

Remove chicken, set aside to cool and slice.

Stir in 1/2 C water and uncooked penne into the pot. Cover and cook on high for about 30 minutes or until pasta is tender.

When pasta is done, stir in parmesan cheese, sliced chicken and additional spices.

Instapot Style

Put olive oil into the pot and heat until high and hit the Adjust button until More is lit.. Place chicken breast (dry, slightly seasoned) into the pot and sear for several minutes, until both sides are evenly browned.

Remove Chicken and set aside.

Add sausage and garlic to the pot and cook for about 1-2 minutes, add chicken broth and use a spoon to scrape up the browned bits from the bottom the pot.

Add dry pasta and seasonings, return chicken to the pot and stir together.

Lock the lid of the instapot in place, set the pressure valve to sealing and cook on manual, high pressure for 6-8 minutes.

Use a quick pressure release. Once the pressure pin has dropped, take the chicken out, double check the chicken is to 165 degrees, and slice the chicken.

Meanwhile, stir the pasta mixture together and add the cream. Stir and slowly add in the parmesan cheese.

Add the sliced chicken back to the pot, stir to combine and serve.

Stove Top (One Pot) Style

Place chicken breast (dry, slightly seasoned) into the pot. Cook until lightly browned.

Stir in garlic, add chicken broth, heavy cream, dry pasta and cajun seasoning into the pot.

Stir together and bring to a simmer on medium heat.

Reduce heat to low and cook for 15-20 minutes, or until pasta is tender.

Remove pot from heat, stir in parmesan cheese and top with any additional seasonings on your choice.
